I love that Starbucks brought us this delicious creation. Even more, I love that I can make them at home more quickly and more cheaply. There is a whole new crop of small appliances that make these egg bites in a snap.

Try a copycat Starbucks version by using gruyere cheese and ham in your egg bites.

I have made Instant Pot egg bites using a silicone egg bite mold. And, in an oven with a muffin tin. But my favorite new way to make Starbucks sous vide egg bites is with an electric egg bite maker.

There are a number of styles and brands on the market. The one I love is made by Hamilton Beach and is compact and easy to use. The instructions here are made for this appliance, but are easily adaptable to any other small sous vide-style egg bite maker.

How to Make Egg Bites

  1. Blend together the egg mixture by combining an egg, shredded cheddar cheese, cream cheese, and bacon. A single serve blender works perfectly for this. But whisking everything together in a bowl will work too. If you are making a larger batch, a food processor will also work well.
  2. Add in the finely sliced green onions and a pinch of salt and pepper for flavor.
  3. Pour the mixture into the two egg cups up to the “Max” fill line. There is no need to spray the egg bite molds with non-stick cooking spray. I really love this feature.
  4. Add the water to the egg bites maker’s reservoir. There is a small cup provided that measures the exact amount. Next, place the egg molds into the egg bite maker.
  5. Plug the sous vide machine in and a green light will come on. After about 7 minutes, the green light will go off and your egg bites are done.
  6. Unplug the machine and carefully remove the mold. Let the egg bites cool for a couple minutes before inverting the mold and letting the egg bites land on a plate.

Top Cook’s Tips

  • Experiment with more of your favorite ingredients so you don’t get bored of the same old breakfast. There are so many combinations you can make.
  • When switching ingredients make sure you use an equal amount of substitution. The total volume you can add to the egg bites cups is 125 ml or 1/2 of a cup. A large egg is approximately 3 tablespoons. So the remaining ingredients should be no more than 5 tablespoons or 75 to 80 ml.
  • Make a batch of these egg bites during your meal prep session to have a quick breakfast option on busy mornings.

Storing and Reheating Leftovers

  • Store any leftover egg bites in an airtight container in the refrigerator. They can be reheated in a toaster oven or microwave in just a few minutes.
  • To make these egg bites ahead of time, place them in a plastic bag and use a vacuum sealer to keep them fresh until you’re ready to enjoy them.

Ingredients
 

  • 1 egg
  • 3 tablespoons shredded cheddar cheese
