There are a number of styles and brands on the market. The one I love is made by Hamilton Beach and is compact and easy to use. The instructions here are made for this appliance, but are easily adaptable to any other small sous vide-style egg bite maker.
How to Make Egg Bites
- Blend together the egg mixture by combining an egg, shredded cheddar cheese, cream cheese, and bacon. A single serve blender works perfectly for this. But whisking everything together in a bowl will work too. If you are making a larger batch, a food processor will also work well.
- Add in the finely sliced green onions and a pinch of salt and pepper for flavor.
- Pour the mixture into the two egg cups up to the "Max" fill line. There is no need to spray the egg bite molds with non-stick cooking spray. I really love this feature.
- Add the water to the egg bites maker's reservoir. There is a small cup provided that measures the exact amount. Next, place the egg molds into the egg bite maker.
- Plug the sous vide machine in and a green light will come on. After about 7 minutes, the green light will go off and your egg bites are done.
- Unplug the machine and carefully remove the mold. Let the egg bites cool for a couple minutes before inverting the mold and letting the egg bites land on a plate.

- Experiment with more of your favorite ingredients so you don't get bored of the same old breakfast. There are so many combinations you can make.
- When switching ingredients make sure you use an equal amount of substitution. The total volume you can add to the egg bites cups is 125 ml or ½ of a cup. A large egg is approximately 3 tablespoons. So the remaining ingredients should be no more than 5 tablespoons or 75 to 80 ml.
- Make a batch of these egg bites during your meal prep session to have a quick breakfast option on busy mornings.

- Store any leftover egg bites in an airtight container in the refrigerator. They can be reheated in a toaster oven or microwave in just a few minutes.

Sous Vide Style Bacon and Cheddar Egg Bites
Ingredients
- 1 egg
- 3 tablespoons shredded cheddar cheese
- 2 tablespoons cottage cheese
- 1 tablespoon crumbled bacon
- 1 green onion light green parts only, thinly sliced
- ⅛ teaspoon kosher salt
- ⅛ teaspoon freshly ground black pepper
Instructions
- Using a personal blender (or hand whisking in a bowl), blend the egg, cheddar cheese, cottage cheese and bacon just until combined.
- Stir in the green onions. Season with salt and pepper.
- Pour the mixture evenly into the egg bite molds up to the “Max” fill line.
- Place the mold in the cooker and close the lid. Plug in the egg cooker.
- After about 7 minutes, or when the green light turns off, carefully remove the egg tray from the cooker.
- Let stand a few minutes. Then invert the egg bites on to a serving plate.
